Starting your day with premium fuel for your body and mind will ensure you make healthier choices throughout the day. Our bodies go without food for hours when we sleep, so when we awake, it's time to break-the-fast with good nutrition! The best breakfasts include protein, fiber and a healthy fat. Some of my favorite breakfasts are scrambled eggs with steel cut oatmeal or a piece of Eziekiel toast topped with avocado, spices and sunny side up eggs- along with assorted berries, coffee(1 tbs MCT oil) and a little cream.
Taking the time to prepare a proper breakfast is important, but can be time-consuming. The below recipes can be made ahead of time, and they deliver a tasty & nutritious treat on the run!
Vegetable and Cheese Egg Muffin Cups: Yields 12
You can use any variation of vegetables for this recipe.
I use chopped red and green peppers, onions, tomatoes, spinach, feta or cheddar cheese.
Spray your muffin tin with cooking spray, place chopped vegetables in cups.
Whisk 8 eggs with a little milk, salt and pepper for your egg mixture and ladle in the cups.
Top with cheese and bake at 350 degrees for about 20 minutes or until tops are browned.
Let cups cool down before removing from tin and store in an air-tight container. Reheat in the morning and enjoy! These yummy cups can also be frozen and pulled out when needed.
Overnight Oats with Berries & Nuts: Yields 1
1 cup rolled oats
1/2 cup nonfat plain Greek yogurt(1 individual container)
1 cup unsweetened almond milk
1 teaspoon vanilla extract
1 tablespoon honey
Combine all above ingredients and pour into a glass container. Cover the container and place into the refrigerator overnight. Eat with your favorite toppings! You can warm it up or eat it cold.
Toppings:
Berries or fruit of your choice
Chopped nuts, flax seeds, chia seeds or nut butter
