 Caribbean Shrimp and Rice Bowl

How to make

1. In a small bowl, mash avocado and greek yogurt together with salt until smooth. In a small saucepan, combine beans, pineapple, mango and salsa. Heat through, stirring occasionally. Prepare rice as package directs.
2. Toss shrimp with jerk seasoning. In a large skillet, heat oil over medium-high. Add shrimp; cook 2 to 3 minutes, until pink.
3. Divide bean mixture and rice evenly among four bowls. Top with shrimp and green onions. Serve with avocado cream and lime wedges.

Ingredients

1 avocado

1/3 cup greek yogurt

1/4 tsp salt

1 can black beans

1 (8 oz) can unsweetened crushed pineapple undrained

1 medium mango peeled and chopped

1/2 cup salsa

1 cup brown rice

1 lb uncooked shrimp, peeled and deveined

1 tsp Caribbean Jerk Seasoning

1 tbp olive oil

2 green onions chopped

4 lime wedges
