Marinated Shrimp & Artichoke Salad

How to make

Whisk together balsamic vinegar and next 4 ingredients in a bowl. Stir in shrimp and next 4 ingredients. Cover and chill for at least a few hours up to 24 hours.

Optional: stir in desired amount of chopped fresh basil just before serving.

Ingredients

1/4 cup white balsamic vinegar

2 tbsp finely chopped fresh parsley

2 tbsp finely chopped green onion

3 tbsp olive oil

1 envelope  Good Seasons garlic and herb dressing mix

2 1lb peeled and deveined, large cooked shrimp

1 (14 oz) can atichoke hearts, drained and cut in half

1 jar pitted kalamata olives drained and cut in half

1 cup halved grape tomatoes

1 (4 oz) package feta cheese crumbles

optional: fresh basil leaves for topping
